Organic Chicken

The Geist’s raised ducks,
rabbits and chickens to supplement
the food supply.
When the chickens
head is chopped off,
theheadless body runs around
with blood spurting out.

The headless chicken
run around like a person
waking up late and
looking for his
misplaced wallet,
or car keys,
or lunch box
not in its usual place or
trying to find the
umbrella on a rainy day.
 
In the Philippines they kill
the chickens in a different way.
A person grabs the chicken
by the head and swings
it around in the air twisting
its neck to its demise.
 
Growing up in the Philippines,
Helen as a child called
the Chickens from their roosting spots
on the outside trees.
With her purring – cooing she calls
chickens in for the feed.

With the demise 
comes the cleaning of entrails,
and the plucking of feathers and
the roasting over the pit fire.
There is nothing better
than the smell of a roasting
organic chicken. 
 
For me I will
go to Shoprite and
buy my GMO and
steroid laden chicken
in its styrofoam and
cellophane packaging.
